In general, food scraps decompose readily and they provide the high nitrogen levels we need to compost large amounts of leaves. When disposed of in a landfill, food scraps are among the first materials to decompose, adding to methane production. Decomposition is performed mostly by bacteria. By performing the activities we suggest, students can begin to understand the conditions bacteria need to do their work.
